Can I add a node to an existing polyline or hatch boundary so that I can change it's shape?

Yes... you can add a node to the Hatch boundary, and change it's shape.

Edit - pic attched. Pic shows before adding node, and after adding a node and moving.

Can I add a node to an existing polyline or hatch boundary so that I can change it's shape?

Select the polyline line using Edit Tool, with it highlighted right click to open local menu, Add Node is available.
